    小诀窍:伊面应该即吃即把滑蛋汁食材溜入面,以免酱汁慢慢的凉透让伊面失去香滑带脆的口感。

    Step 1

    将纯净水煮开后,挤入适量的虾胶,虾胶在滚水中凝固后,即可捞起,备用。Place prawns paste into boiling water, cook for a while till set, drain and set aside.

    Step 2

    将干伊面放进滚水中,略煮至软后,即可捞起,沥干水份,备用。Arrange yee mee into boiling water, cook till soft and drain, set aside.

    Step 3

    取一平底锅,倒入少许食油烧热锅后,将伊面平铺在锅内,煎至两面金黄微焦即可上碟,备用。Heat some oil in frying pan, toss in yee mee and fry until both side golden brown, set aside.

    Step 4

    使用原锅,下少许食油爆香蒜蓉,加入虾胶翻炒后,下苦瓜片,翻炒至去生。Use the same frying pan, add some oil and sauté chopped garlic till fragrant. Toss in prawns paste bitter gourd, stir well.

    Step 5

    倒入高汤和调味料,煮至滚后,倒入芡汁,拌匀,小火煮至滚。Pour in stock and seasoning, bring to a boil. Thicken with some starch, continue simmer with low heat till boil.

    Step 6

    倒入蛋液,然后将苦瓜虾胶倒在香煎伊面上,即可趁热享用。Pour in egg sauce, add in bitter gourd prawns paste on the yee mee, serve hot.
